Salad Ring / Cake

Grated Cheddar Cheese

English Cucumber (sliced in rings)

2 Carrots (julienned)

Onion rings

3 color peppers (julienned)

Butter lettuce chopped finely

Dressing: 1 cup mayo, 3 tbsp yoghurt, seasoning of your choice and some vinegar to thin the dressing

Method: In a cake/ jelly mould layer the salad begin with each ingredient as listed above Grated Cheddar cheese → cucumber → carrots → onion → peppers→ and ending with the lettuce, Be sure to pack down each layer by pressing firming between the layers.

If you have a big enough mould, you are welcome to repeat layers for a more elaborate effect.

Refrigerate for minimum 4 hours.

Turn onto plate just before serving.

Pour over the ring and let it drip over the sides. Top with dried cranberries / cashew nuts / toasted almonds / etc Essentially, any thick Mayo based dressing will compliment the dish.
