Red Velvet Cake

Bint Purple had this recipe to share with the secret chef -

Red Velvet Cake
60g butter
150g castor sugar
1 egg
10g cocoa
20ml red food colouring
1/2 tsp vanilla essence
120ml buttermilk
150g flour
1/2 tsp salt
1/2 tsp bicarb
1 tsp white vinegar

ICING
1/4 pound butter
2 cups icing sugar
1 tub cream cheese
1 tsp vanilla essence

Method: beat butter & sugar till fluffy. 
Add egg and beat until smooth texture, add cocoa,food colouring, vanilla essence, buttermilk and flour and mix with a beater. 
Then mix vinegar with bicarb (it must sizzle) and add to mixture, add salt and mix together with beater. 
Pour into cupcake holders or alternately bake as a full cake.

For icing: soften butter slightly, add cream cheese, icing sugar and vanilla essence until a smooth texture is formed. 
Careful not to make it too soft. 
Pipe onto cupcakes or smooth over cake!!
