Recipe of the day... Coriander chicken wings with new potatoes


20 chicken wings
1 kg new baby potatoes
15 ml Cajun spice
5 ml peri-peri powder
10 ml ground cumin
15 ml coriander seeds, crushed
10 ml ginger paste
15 ml balsamic vinegar
salt to taste
45 ml olive oil
150 ml fruit chutney
60 ml brown sugar
freshly ground black pepper
150 ml roughly chopped coriander leaves
Preheat oven to 180 °C. Coat an ovenproof dish with non-stick cooking spray.
Place chicken wings, potatoes, all spices, ginger paste, balsamic vinegar and salt in a large bowl and mix together well.
Pack the chicken wings and potatoes in the ovenproof dish and pour over olive oil, chutney, brown sugar and pepper. Sprinkle with coriander and cover dish with foil.
Place in oven and bake for 50–60 minutes. Remove foil, check potatoes for tenderness and place in oven to brown for a couple of minutes. Serve with savoury rice and a salad of choice.
