250g cream cheese, softened
200g feta cheese, crumbled
200g Mozzarella Cheese, grated
2 baby marrows, grated
1 carrot, peeled and grated
1 green pepper, chopped
1 red pepper, chopped
5ml Portuguese spice
5ml paprika, powder
5ml coarse black pepper
30ml garlic paste
15ml baking powder
salt to taste
6 eggs separated
65ml cake flour
100g Mozzarella Cheese, grated, for topping

Preheat oven to 180°C. Coat a round Pyrex Pie dish with non-stick cooking spray.
• Steam spinach and squeeze out as much moisture as possible.
• Place cream cheese, feta, mozzarella, vegetables and spices in a bowl.
• Beat egg yolks well and sift in cake flour. Beat together.
• Add to vegetable mixture and mix through.
• Sprinkle baking powder over mixture and mix well.
• Beat egg whites to firm and fold into vegetable mixture and pour into round dish.
• Bake for 25minutes or until set. Insert skewer and check for doneness. Allow to cool slightly. The cheesecake will rise in oven, once cooled down it will settle and go down.
