CARROT SOJEE HALWA by Shanaaz Parker

150ml Ghee
12 sultanas
3pieces stick cinnamon
3 cardamom pods
250ml carrots, finely grated
200ml Tastee Wheat
200ml hot water
100ml hot milk
250ml sugar
3 egg yolks
1x155g Nestle Cream
For Garnishing
Almonds and Pistachios to sprinkle

• In a large thick base pot heat ghee, sultanas, cinnamon sticks, cardamom and carrots.
• Braise for 7-10minutes tossing around in pot.
• Add Tastee Wheat and braise for 3-5minutes.
• Add water and close with lid and simmer over low heat till water is absorbed.
• In a jug beat milk, sugar, egg yolks and cream well together.
• Add to Tastee Wheat and mix well ensuring that there are no lumps.
• Leave to steam over low heat fluffing with a fork.
Garnish with nuts and serve as desired
