Pancakes by Cape Malay Cooking with Fatima Sydow


1 large egg
2 cups of cake flour
1 cup of full cream milk
1 cup of water
1 tablespoon of vanilla essence
1 tablespoon of sugar
Pinch of salt

Method
Whisk egg and sugar till light and fluffy , add the rest of the ingredients and mix till well combined .
Heat up a non stick frying pan and drizzle a teaspoon of cooking oil in pan , pour 1/4 cup of pancake batter into pan swirling the pan around quickly to spread out the batter evenly and thinly - after 30 seconds lift with spatula or flip pancakes - practice makes perfect .
Makes about 20 pancakes .
For filling -
Just simple Jam ,
Cinnamon sugar
Banana caramel cream
Strawberry ,syrup And cream
Coconut and cinnamon filling
Chicken and mayo filling
Salmon and cream cheese filling
Prawn and cream cheese filling
Roasted vegetables with Mozzarella and basil filling
You may add another egg in batter if you want the pancake to have a more stiff consistency. Omit the sugar when making savoury pancakes.
