Bringal chutney

6  Lg bringals
2 1/2 Tbsp turmeric
Salt to taste
1 1/2 Tbsp cumin
2  Tbsp ground garlic
2  Tbsp crushed red chillies
3  Tbsp garam masala
3 1/2  c oil
1  tsp fenugreek seeds
1  c vinegar
1  c  sugar

Wash bringal, cut off stalks n cut into cubes
Sprinkle with  
1 Tbsp turmeric

Add the rest of the turmeric, garam masala,  ground cumin, garlic n chillies to the vinegar. (Only put chillie seeds in if you want it very hot)
Fry Bringals til Brown then drain n place in bowl
Add the spiced vinegar to the oil you cooked the bringal in, 
Boil for 10 minutes
Put Bringal into oil/vinegar
Add sugar
Boil  15 minutes
Allow to cool and Bottle the next day Lasts for at least 6 weeks

Can also serve as a side dish
