Chocolate Cupcakes


4 eggs
1 1/2 C castor sugar
1/2 C oil
1 C boiling water
4 Tab cocoa
1 3/4 C flour
3 tsps b pd
Pinch of salt
1 tsp v ess
Method
Beat eggs n sugar until light n fluffy  10 mins
Mix  cocoa with boiling water leave aside
Add oil n v ess beat until  blended
Sift flour with 3 tsp b pd n salt 3 tyms
Fold into liquid mixture add the cocoa mixture n mix lightly until well blended
Fill half way in paper  cups which have been lined in muffin trays Bake 180g  15 to 20 mins until done garnish with chocolate
ganache.
Ganache
200g plain  chocolate
60g   butter
1/2 cup fresh cream
Melt choc n butter remove from heat whisk in  cream leave to  cool n thicken
Decorate as desired
