Beetroot and naartjie salad

Assorted lettuce and rocket leaves
1 medium beetroot Peel and cut into 8 wedges
1 Naartjie peeled and remove skin
Crumbled feta
Sunflower seeds 
Pistachio lightly chopped


1 blsp olive oil
3 tblsp balsamic vinegar
1 clove garlic crushed
Salt and Pepper to taste 
1 tsp honey or to taste

Preheat oven to 190
Place beets on a tray
Drizzle olive oil, salt and pepper
Bake till tender. Cool
Place lettuce and rocket on platter
Top with rest of ingredients 
Drizzle dressing just before serving
