Arroz Marisco (seafood rice)

500g shrimp meat
250 g prawn meat
250g fish fillets
500 g tastic rice soaked for a few hours
4-5 medium tomatoes
2 large red capsicum
1 large bunche fresh chopped coriander
2 medium onions
5-6 dry Birds eye chillies
Extra chilli powder ( optional )
2 Tblsp crushed garlic
Salt to taste
500ml Chicken stock
Fry cubed onion in olive oil and butter till golden brown add birds eye chillies
Add garlic n tomato n fry till well braised
Add prawns, capsicum n some chopped coriander . Cook a little n turn off heat so it marinates n absorbs flavours well
When ready to serve add stock n boiling water n soaked rice n allow to cook till rice is almost done
Add fish pieces at end n cook till just done. Add water to thin down as required. Add more coriander and stir thru. Serve garnished  with remaining coriander

Serve as a soupy dish with crusty bread
A squeeze of lemon enhances the flavour... Serve with lemon wedges
You can add any seafood of your choice
